Chanfana de Borrego (Lamb “Chanfana”)

– 1kg of lamb
– 2 onions
– 3 garlic cloves
– bacon in cubes
– red wine
– olive oil
– 4 cloves
– 1kg of potatoes
– 1 laurel leaf
– 1 tsp of hot chilli
– salt
– pepper
1- Remove the lamb fat, wash it and cut it into small pieces.
2- Finnelly chop the onions and garlic and then join to the meat as well as the cloves, bacon, olive oil, laurel leaf, salt and pepper. Put everything in a pan. Then pour in the red wine until it covers everything and let it marinate for 24 hours.
3- Put the pan on the stove for 25 min, low heat.
4- Cut the potatoes in half and put them in the oven for 30 min, 200ºC with a little bit of olive oil on top.
5- Serve and enjoy!
