– 300 gr of grated coconut
– 250 gr of sugar
– 10 eggs
– grated peel of one lemon
– 125 gr of melted butter
– juice from ½ lemon
1- Whisk very well the sugar with the melted butter, the eggs, the grated lemon peel and the lemon juice.
2- Add the grated coconut and mix without whisking.
3- Grease very well a cake tin and put the batter inside it. Cook it in water bath for 50 minutes in a moderate preheated oven (180°C/ 350°F). Supervise while it’s cooking and when it’s ready serve cold.
