Ensopado de Borrego (Lamb Stew)


– 1,5 kg of lamb
– homemade bread
– olive oil
– 2 onions
– 5 garlic cloves
– 1 laurel leaf
– 2 tsp of sweet paprika
– 3 tbsp of balsamic vinegar
– hot sauce
– parsley
– salt q.b.
– pepper
1- Cut the lamb in small pieces and fry in low heat with olive oil, until it’s golden. Remove it.
2- Chop the onions andgarlics and fry in the olive oil together with the laurel and the pepper. Then, join the lamb with salt, paprika, parsley and hot sauce and join a glass of water. Let it boil for 30 min in medium heat.
3- Cut the bread and add to the pan until it has absorbed the water.
4- Remove the meat and join the balsamic vinegar and let cook for 5-10 min. Serve the broth on top of the meat.
