Feijoada à Brasileira (Brazilian “Feijoada”)


– 1,5kg of pork, lamb and cow meat (not 1,5kg of each!) – 1 pig foot – 1 pig tongue – chorizo and salami

– bacon
– black beans
– 1 chopped cabage
– 2 onion – 4 garlic cloves – vegetable oil – 1 cup of fresh orange juice
– 1 cup of lemon juice
– salt
– pepper
– hot chilli
– chopped parsley
1- Put all the meat (except for the bacon and cow meat) in a recipient with water, at least for 18 hours. Change the water 2-3 times. Then put them in a pan with a clean water and let it boil for 15 min in medium heat. Then change the water and boil for 45 min in low heat.
2- Add the rest of the meat and cook for 1h in low heat.
3- In another pan, boil the black beans for 10-15 min in medium heat. Season with salt and pepper.
4- In another pan (i’m not doing the dishes), add 1 chopped onion and 2 garlic cloves, the oil and all the previously cooked meat (cut in pieces) and let it cook in low heat for 10 min. Then, add the orange juice and the beans. Let it cook in low heat for another 10 min and add the hot chilli (take it easy cowboy!)
5- Fry the other onion and the 2 garlic cloves in a frying pan, until golden. Add the finnely chopped cabage and bacon. Let it cook for 5 min and then add the lemon juice. Finally, season with salt pepper and chopped parsley. Bom apetite!
