Tomatada de Grão-de-Bico (Chickpeas Tomato Stew)

Ingredients:

– 400 g / 14.1 oz. of cooked chickpeas
– 500 g / 17.6 oz. of pumpkin
– 300 g / spinach
– 3 tomatoes
– 2 garlic cloves
– 1 medium onion
– 4 tbsp. of olive oil
– 1 dL / 0.4 cups of water
– coriander
– paprika
– salt

1 – In a pan, fry the chopped onions and the garlic on olive oil. Stir continuously and when it becomes gold add the finely chopped tomatoes. Cook for 5 minutes.

2 – Add the pumpkin diced into cubes, the chickpeas and the water. Season with salt and paprika. Cook for 10 minutes and add water if needed.

3 – Add the spinach and cook for 5 more minutes.

4 – Serve with the chopped coriander on top and rice.
